Lemon Cake With Frosting
Lemon cake is a classic cake which I love since ever! It tastes in my opinion especially good because it has a delicious frosting. For me a lemon cake without frosting is not a real lemon cake, who agrees? When I was a child, I had a special way to eat lemon cake. I always started at the bottom of the cake and in the end, I still had all the frosting and ate it with a little bit of the cake base. My motto was: “the best comes for last”.
Servings: 25cm cake tin, 6-8 pieces
Cooking time: 25 minutes Total time:50 minutes
You need for the
... lemon cake base:
40g ground almonds
60g oat flour
3 eggs (separated into egg yolk and egg whites)
170g banana
50g coconut milk
25g cashew butter
3 tbsp lemon juice
Organic lemon zest
½ tsp vanilla
A pinch of salt
...frosting:
3 tbsp lemon juice
45g cashew butter
40g coconut milk
15g honey
...taste and decoration:
1-2tbsp lemon juice
1 tbsp cashews
How to make:
1. Firstly, make the base. Put all the dry ingredients together: ground almonds, oat flour, lemon zest, salt and vanilla. Mix! Then add egg yolk, lemon juice and cashew butter.
2. As next step, blend the banana with your coconut milk until it´s smooth. We want no banana pieces, it´s just should be our sweetener. After mix the banana mixture with the rest of the dough.
3. Now whip your egg whites and carefully fold in your dough.
4. Preheat your oven to 170 degrees. Meanwhile pour the dough into a cake tin of your likings.
5. Bake your lemon cake for about 25 to 30 minutes. But definitely check it, because it can depend on the oven and/or your cake tin. The flatter your cake is, the sooner it is ready. In the meantime, you can make the frosting: blend lemon juice, cashew butter coconut milk and honey. It´s should be next level smooth.
6. After your cake has baked long enough, pour over some lemon juice as extra flavor. Wait and when it has cooled down spread over your frosting. Add some cashews on top!
7. Enjoy!
