Sweet Potato And Peanut Cupcakes

I love it to bake with sweet potato! It gives natural sweetness to the baked goods and you can take it instead of flour.  And the combo of a sweet potato cupcake base with a creamy peanut frosting is just so yummy - the perfect bake for your week ahead!

Servings: 12 cupcakes
Cooking time: 30min                                        Total time: 1h

 You need for the
...cupcake base:

200g cooked sweet potato
30g coconut sugar
100g apple puree
50g peanut butter
50ml almond milk or other plant-based milk
2 eggs (split in egg white and egg yolk)
½  tsp vanilla
1 tsp cinnamon
A pinch of salt

...peanut cream for on top:
30g peanut butter
60g coconut yoghurt
30g apple puree
10g maple syrup

How to make:
1. If you haven´t cooked your sweet potato yet, do this at first: they need about 20 to 30 minutes in a cooking pot depending on the size you cut them. Before you cook, definitely remove the peel.
2. Preheat the oven to 180 degrees Celsius!
3. After mash the cooked sweet potato and then combine with coconut sugar, apple puree, peanut butter, almond milk, egg yolk, vanilla, cinnamon and a pinch of salt.
4. Then take the egg white and beat it up. Next add it to your sweet potato mixture and stir it again well.
5. Now you can grip your cupcake cups and pour in the dough on you muffin tray. Place it for 20 to 25 minutes in the oven.
6. While the oven is doing its work, we make our cream for on top. Simply mix peanut butter with yoghurt, apple puree and maple syrup.
7. After the baking time is over, let your cupcakes cool down on a plate. When they aren´t so hot anymore, spread over the cream.
8. Enjoy!
