Baked Raspberry Oats With Cashew Sauce

Once it´s cold outside, it´s nice to have a cozy warm breakfast. And what would be better than creamy raspberry oats and cashew sauce to make you feel strong, nourished and heated up against the cold!?

Servings: 1
Cooking time: 10 minutes              Total time: 25 minutes

You need for the

…base:
½ banana
1 tsp cashew butter
50ml almond milk
1 egg (or replaced with flax egg)
½ apple
100g raspberries (frozen)
50g oats
¼ tsp vanilla
1 tsp coconut oil

…cashew sauce:
15g cashews
2-3 tbsp almond milk
1 tsp maple syrup

… toppings:
Raspberries
homemade raspberry yam (optional)

How to make:
1. Soak your cashews for at least 15 minutes in hot water!
2. Next start with making the oat base. Mash your banana in a bowl and add the cashew butter, almond milk, egg and vanilla to your bowl. Mix it well and put into it grated apple, raspberries, and oats as too.
3. After combine all the ingredients. Then, you can take an oven dish and grease it with some coconut oil. Put in the oat base and bake it for about 15 minutes at 180 degrees in the oven.
4. While the baked oats are in the oven, you could prepare the cashew sauce. Blend the soaked cashews (without the water!) with the almond milk and maple syrup. It should be nicely smooth!
5. Oven is done? Then take out the oats, add some raspberry yam, cashew sauce and decorate with raspberries.
6. Dig in and enjoy!
