French Toast With Berry Cream

Let´s make a healthier version of the “French Toast, “Armer Ritter”, “Pain Perdue” or “Torrijas”. You can simply replace the rather unhealthy wheat toast with a delicious wholemeal bread. This bread change adds more nutrients to your meal and keeps you longer satisfied. Further, we don´t need much sugar, but rather a delicious berry cream and fresh berries on top!

Servings: 1
Time: 20 minutes

You need for the
…French toast:
2 slices of bread (in total about 100g, I had a grain and seed bread)
1 egg
3 tbsp almond milk
1 tbsp maple syrup
¼ tsp vanilla
½ tsp cinnamon
1 tbsp coconut oil for frying

…berry cream:
50g frozen raspberries (it´s important that they aren´t thawed completely)
70g coconut yoghurt
1-2 tsp agave syrup
1 tsp cashew butter

…other toppings:
Fried banana (about 1/3 banana)
Blueberries
Chopped cashews

How to make:
1. Start by making your French toast. First of all, whisk egg with almond milk, maple syrup, vanilla and cinnamon. Then add your slices of bread and let them soak the egg mixture.
2. Afterwards heat up a pan with some coconut oil and fry the bread from both sides. If you have something of the egg mixture left, I recommend to fry them as scrambled eggs to not waste anything.
3. For the berry cream: simply mix frozen raspberries, coconut yoghurt, cashew butter and agave syrup well together.
4. Optional: fry the banana and chop some cashews (and blueberries)
5. Put French toast onto a plate and top it with the berry cream, fried banana, chopped cashews and blueberries.
6. Enjoy!
