Lovely Pancakes
Pancakes for breakfast are just a lovely start in the day. The combination of chocolaty pancakes with a delicious raspberry yoghurt is a great idea for your next weekend brunch! In winter you can thaw some frozen berries and in summer you can take the fresh ones: raspberries, strawberries, blueberries, blackberries, redcurrants, blackcurrants… And I´ll promise: it tastes very good both ways!
Servings: 1
Time: 20 minutes
You need for the
…chocolate pancake dough:
½ ripe banana
40g oats
10g raw cacao powder
A pinch of salt
75-100ml almond milk (or other plant-based milk)
1 tbsp coconut oil for frying the pancakes
…berry cream:
40g frozen berries (it´s important that they are frozen, so that they colour the cream)
3-4 tbsp coconut yoghurt
1 tsp cashew butter
2 tsp agave syrup
…other toppings:
Gooseberries,
Raspberries
Strawberries
Redcurrants
Blackcurrants
How to make:
1. For the chocolate pancakes: mash banana and add oats, raw cacao powder, salt and almond milk. Mix until you have a creamy chocolate dough. It shouldn´t be too liquid and rather a bit thicker than as you would prepare overnight oats.
2. Afterwards heat up a pan with some coconut oil and fry each pancake from both sides.
3. For the berry cream: simply mix frozen berries with coconut yoghurt, cashew butter and agave syrup.
4. How to serve: put all your pancakes on a plate and add on each pancake some berry cream. The rest of the cream, you can place aside and as last decorate your pancakes with some more berries.
5. Enjoy!
