Peanut Hummus Breakfast Jar

Bored from oats or bread for breakfast? Well, then make this sweet hummus jar for tomorrow. It´s a great change to a normal breakfast routine and yes: a sweet chickpea peanut cream tastes really good. So, don´t be too skeptical of it, you´ll never know if you never try!

Servings: 1
Time: 20 minutes

You need for the
…raspberry layer:

120g frozen raspberries
1 tsp tapioca starch
1 tsp maple syrup
3 tbsp water

…peanut hummus:
120g chickpeas
20g peanut butter
½ banana
1 tbsp maple syrup
1-2 tbsp almond milk
A pinch of salt
¼ tsp vanilla

…chocolate shell:
25g dark vegan chocolate
1 tsp coconut oil

How to make:
1. Start by preparing your raspberry layer. You simply have to put raspberries, tapioca starch, maple syrup and water into a pot. Cook it until the raspberries are mashed and the consistency is gooey and sticky.
2. After prepare the peanut hummus layer. For that, put chickpeas, peanut butter, banana, maple syrup, almond milk and a pinch of salt and vanilla into your cooking pot. Blend until the consistency is smooth and creamy.
3. It´s time to melt your dark vegan chocolate with coconut oil over a warm water bath.
4. Finally, you can layer your breakfast: the first layer is the raspberry layer, the second one is the peanut hummus and the last one is the melted chocolate shell.
5. Place your breakfast overnight in the fridge and take it out the next morning.
6. Crack the chocolate layer and enjoy!
