Strawberry Cheesecake Overnight Oats

Cheesecake is a classic dessert – However, it can be your next breakfast using wholesome ingredients that make you feel good and nourished for the day!

Servings: 1
Time: 20 minutes

You need for the
… oat base:

½ banana
40g oats
2 tsp chia seeds
 ¼ tsp vanilla
100ml almond milk

…cheesecake cream layer:
25g cashews
75g coconut yoghurt
1-2 tsp agave syrup
¼ tsp vanilla

…strawberry layer:
120g strawberries
2 tsp tapioca or corn starch
1-2 tsp maple syrup (optional)

…toppings:
1-2 tbsp coconut yoghurt
Strawberries

How to make:
1. At very first soak your cashews in hot water for at least 15 minutes.
2. Then move on with preparing the oat base. Simply mash banana and add oats, flax egg, vanilla and almond milk. Place it aside.
3. Now make the strawberry layer. Blend the strawberries until you have a smooth strawberry puree. Put this mixture into a pot with some tapioca and sweetener if you like. Mix! Heat it up and mix it the whole time (because the layer shouldn´t go lumpy!): When the consistency is stiffer (gooey) and not that liquid anymore, then you can turn off the heat of the stove.
4. For the cheesecake cream layer; blend the cashews (without the water), coconut yoghurt, agave syrup and some vanilla until it is as smooth as possible.
5. How to layer: put all the oats in jar, add all of the cheesecake cream layer and as last pour over the strawberry layer. Set the jar overnight in your fridge.
6. The next morning top them with some more coconut yoghurt and strawberries.
7. Dig in and enjoy!
