Vanilla Pancakes With Chocolate Sauce
Pancakes are an amazing idea if you want to surprise friends or family coming over for breakfast or brunch. And these pancakes will stay forever one of my favorite combinations! Creamy, soft and sweet pancakes, an addictive chocolate sauce and fresh seasonal berries. Hhhmmmm, taste bud explosion!
Servings: 1
Time: 20 minutes
You need for the
…vanilla pancakes:
½ banana
1 Medjool date
50g oat flour
1-2 tbsp coconut yoghurt
30ml almond milk
A pinch of salt
¼ tsp vanilla
1 tbsp coconut oil for frying
…chocolate sauce:
20g almond, hazelnut or cashew butter
10g coconut oil
15g maple syrup
1 good tsp raw cacao powder
A pinch of salt
…toppings:
Strawberries
Raspberries
Blackberries
Blueberries
How to make:
1. Pancakes: Blend all the ingredients: banana, Medjool date (without the pit), oat flour, coconut yoghurt, almond milk, salt and vanilla until smooth. Then, heat up a pan (not too much heat!) and fry your pancakes with some coconut oil. When the pancakes become “stiffer” and you have the feeling that they are slightly brown, turn them once.
2. For the chocolate sauce, mix coconut oil, nut butter, maple syrup, raw cacao powder and salt. To make it perfectly smooth and combined, I recommend to heat it up a bit by using for example a water bath.
3. Now, cut your berries and start with stacking your pancakes. Put them all on a plate, spread over it your chocolate sauce and finish it with placing your fruits nicely. Take a bit and enjoy your masterwork!
