Baked Quinoa With Cheesy Sauce

Have you ever tried to make baked quinoa? NO?! Then you just have to: it´s a creamy, comforting and cozy meal. Perfect for an easy lunch or dinner and the preparation takes almost no time!

Servings: 1-2
Cooking time: 30 minutes                               Total time: 1h

You need for the
…baked quinoa:
60g quinoa, not cooked yet
1 pepper (I had ½ orange and ½ red pepper)
150g broccoli
30g cashews
130g black beans (drained net weight)
175ml coconut milk
Juice of ½ lemon
2 tsp agave syrup
1 tsp curry powder
½ tsp turmeric
Salt and pepper
1 hand of cilantro or parsley

…vegan cheese sauce:
4 small carrots
40g cashews
Juice of ½ lemon
50-75ml cooking water (water in which you´ve cooked the carrots and cashews)
1 tbsp nutritional yeast
Salt and pepper

How to make:
1. Preheat the oven to 200 degrees Celsius!
2. Then, you can start with preparing the baked quinoa. At very first make the sauce. Simply mix coconut milk, lemon juice, agave syrup, curry powder, turmeric, salt, and pepper well together. Place it aside.
3. Then, rinse the quinoa and add it to an oven dish. Add as well peppers (cut in small pieces), broccoli, rinsed beans and cashews. Mix it with the sauce and cover the oven dish with aluminium foil. Put the oven dish for about 35-50 minutes in the oven. Definitely check if the quinoa is done before you take it out of the oven!
4. Meanwhile you could make the vegan cheese sauce. Cut the carrots and put them into a cooking pot with cashews. Add some water and cook it for about 10 minutes until the carrots and cashews are softer.
5. Afterwards you can blend the carrots and cashews with about 50-75ml of the cooking water, nutritional yeast, lemon juice, salt and pepper until the sauce is creamy.
6. When the baked quinoa is done, you can spread over the vegan cheese sauce on top and decorate with some chopped cilantro or parsley. Dig in and enjoy!
