Best Combo Jackfruit Wrap
Jackfruit is the biggest tree fruit in the world and one single jackfruit can have a weight of maximum 50kg! Almost unbelievable! Unripe jackfruit is a great alternative to replace “pulled pork” , as mixed and cooked with sauces it can take it easily up and in it´s ripe or later dried form it tastes sweet like the combination of mango and banana. However, in this wrap I used it for a savory filling and that is incredibly yum!
Servings: 2
Time: 30 minutes
You need for the
…wrap:
2 wraps (I recommend whole wheat or spelt warps)
½ avocado
6 tbsp coconut yoghurt (no added sugar)
8 tbsp corn
½ avocado
50g vegan feta
…jackfruit:
225g jackfruit (drained net weight)
25g cashew butter
20g tomato paste
3 tsp red curry paste
1 ½ tbsp tamari or soja sauce
1 tbsp coconut oil
1 tsp maple syrup
1 garlic clove
How to make:
1. For the marination: blend cashew butter, tomato paste, red curry paste, tamari or soja sauce, coconut oil, maple syrup and garlic clove in your mixer.
2. Next, prepare the jackfruit: pull it. Combine the jackfruit with the marination and marinate it for at least two hours.
3. Now you have two options: whether you bake the jackfruit for 20 minutes in the oven at 180 degrees Celsius or you fry it on a frying pan. Both works!
4. For the wrap: prepare your corn, cut your vegan feta and avocado. Heat up a pan and add your wrap. Spread on half of the coconut yoghurt and half of the add jackfruit, half of the avocado, half of the corn and vegan feta. Let it briefly rest on your pan and then fold it like an omelet. Do the same with your other wrap.
5. Enjoy!
