Summer Peach And Zucchini Pasta Salad

The combination of fried peach and zucchini makes this salad to your new favorite summery dish! It tastes so good, has lots of different salty and sweet flavors and it´s very easy to make. After trying, you´ll want only one pasta salad this summer!

Servings: 1
Cooking time: 20 minutes                               Total time: 1h 20 minutes

You need for the
…salad:

60g pasta (I like chickpea, lentil buckwheat or wholemeal)
1 small yellow zucchini
1 yellow/white peach
1 tbsp olive oil

…salad dressing:
1 hand of parsley
1 tbsp carpers
1 garlic clove (minced)
1 tsp Dijon mustard
1 ½ tbsp olive oil
Juice of ½ lemon
1 tbsp apple cider vinegar
1 tbsp maple syrup
Salt and pepper

How to make:
1. Start by cooking your pasta after your package instructions.
2. Then cut your zucchini into thinner circles and your peach into middle-sized cubes. Fry zucchini and peach in a pan with olive oil until slightly brown from both sides.
3. Meanwhile chop herbs and carpers and add it to a larger bowl with the rest of the ingredients for the dressing: minced garlic, Dijon mustard, olive oil, lemon juice, apple cider vinegar, maple syrup, salt and pepper. Mix!
4. When pasta, zucchini and peach have cooled down a bit, you can put them into the bowl and combine again. Wait until it´s not warm anymore and let it soak overnight in the fridge.
5. Enjoy! (Tip: it tastes the best straight from the fridge when it´s cold)
