Zucchini Feta And Olive Pasta

One of my first ever (in my opinion) very creative recipes. The sauce is made from feta and tastes especially great if it´s heated up with the veggies. This could be your new favorite pasta dish!

Servings: 2
Time: 35 minutes

You need for the
....pasta:
2 zucchinis
1 tbsp olive oil
1 pack of olives (about 100g)
150g of pasta

...feta sauce:
200g feta cheese
½ lemon
1 tbsp of dried herbs: dried rosemary, thyme, oregano and basil
30ml water

How to make:
1. Preheat the oven to 180 degrees Celsius!
2. Wash, dry and cut your zucchini. The smaller you cut them, the earlier there are finished!
3. Bake your zucchini with some olive oil, salt and pepper for about a half hour in the oven.
4. Meanwhile you can prepare the sauce: Take a blender, put the herbs with feta, the pressed half lemon and 4 tbsp of water in it. Blend! If your sauce is smooth and hasn´t got big lumps, it´s ready.
5. Cut the olives and mix it together with the feta sauce.
6. Cook the pasta and follow the package instructions!
7. Combine the zucchini with the feta sauce and pasta.
8. Enjoy! When the feta cheese becomes warm and melts, it tastes the best.

Health benefits about olives:
1. Olives are composed of essential fatty acids, which can prevent Diabetes.
2. In our gut are many useful bacteria and with olives we can nourish them!
3. Black olives are more matured than green. That´s why they are higher in calories. But some companies color green ones for selling them as black. So, take care, when you buy them next time!
