Creamy Cashew Butter Chicken With Dried Tomatoes
When I´ve made this recipe for the first time, I was like: “That´s the best chicken I´ve ever made” and I still make it after years. It´s yummy, easy to make and the perfect protein side dish for your lunch. And I must admit: it tastes freshly cooked the best!
Servings: 2-3 (as side dish)
Cooking time: 20min
You need for the
…chicken:
300g chicken breast fillets
75g dried tomatoes
1 tbsp olive oil
…creamy cashew butter sauce:
1 tbsp cashew butter
1 tsp miso paste
1 garlic clove (chopped into smaller pieces)
100ml coconut milk
½ lemon (juice)
2 tbsp rice vinegar
1 tbsp maple syrup
Pepper (miso paste is salty enough)
How to make:
1. Start with the preparation of the sauce. For that, simply put cashew butter, miso paste, chopped garlic clove, coconut milk, lemon juice, rice vinegar, maple syrup and pepper in a blender. Blend it until the sauce is very smooth!
2. Continue with cutting the chicken breast fillets into smaller cubes. Then cut as well your dried tomatoes and remove some of the fat as usually the dried tomatoes are very oily.
3. Afterwards heat up a pan with some olive oil. When the pan is hot enough, you can add the chicken and fry it until it´s almost done. At this point, you should put the dried tomatoes and the sauce into the pan as well. Let it cook until the chicken is completely done (it´s important that it´s not too dry, but also not raw).
4. Serve the chicken with some veggies and maybe some rice/quinoa… and enjoy!
