Crispy Baked Salmon
This is one of my favorite dishes ever! The combination of crispy baked salmon, a creamy corn dip, some veg to dig into the dip and a fresh salad – that´s all I want! It´s a great dish to make for friends and family, especially if you like to prepare something that´s easy to make, healthy and special.
Servings: 2
Time: 45 minutes
You need for the
…salad:
3 leaves of lettuce
1 hand of spinach
1 mini cucumber
½ avocado
…salad dressing:
2 tbsp olive oil
1 ½ tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp Dijon mustard
Salt and pepper
…salmon:
250g salmon (2 pieces)
1 egg
50g cornflakes (unsweetened)
Salt
2 tbsp olive oil
...corn dip:
2 corns
2 tsp cashew butter
1 tbsp olive oil
Juice of 1 lemon
Salt and pepper
Optional:
200g leftover baked veggies (I had turmeric cauliflower)
How to make:
1. At first prepare the corn dip. For that you simply need to take your corn, remove the corn form the stem and fry it in a pan with some olive oil. Then, add to a blender with cashew butter, olive oil, lemon juice, salt and pepper. Blend until creamy and if necessary because it´s too stiff, add some almond milk and blend again.
2. Then take your salmon, wash and dry it properly. Whisk your egg and combine it with the salmon. Take your cornflakes and blend with some salt, so that you can take it for the coating the salmon. Place it o a sheet of baking paper on a baking tray, pour over some olive oil and bake it for 15 minutes in the oven.
3. Now mix all the ingredients for the salad dressing together. Cut your lettuce, add spinach, some sliced cucumber and cube avocado. Mix salad and dressing.
4. Now you can assemble. Add some salad, corn dip, one piece of salmon, some leftover baked veggies and enjoy!
