Curry Marinated Chicken

No time under the week? No problem! Just prepare this chicken recipe and you´ll have a tasty protein-packed side dish for quick lunch bowls.

Servings: 2-3 (as side dish)
Cooking time: 20 minutes          Total time: 2h 20 minutes

You need for the
...cold curry chicken:
400g chicken
1 tbsp olive oil

...cold curry chicken cream:
150g coconut yoghurt
1 tsp curry powder
1 tsp turmeric powder
Salt and pepper
3 small garlic cloves (pressed out with the help of a garlic press)
Juice of 1 lemon
2 tsp agave syrup
1 tbsp olive oil

How to make:
1. Start by cutting your chicken into smaller pieces and frying it in a pan with the coconut oil. It should be slightly brown from both sides. After, let it cool down.
2. Now prepare the cream where the chicken comes later in. Simply mix coconut yoghurt with curry powder, turmeric powder, salt and pepper, pressed out garlic cloves, lemon juice, agave syrup and olive oil.
3. Then add the chicken to the cream and combine it well. Let it cool down properly and put the bowl overnight or at least for 1-2 hours in your fridge (the best here: with a top or some cling film to cover). The longer the chicken is marinated, the better it tastes.
4. Enjoy!
