Oh my gosh – this dressing is just so delicious that I cannot stop making it anymore. Ripe avocado, creamy brown almond butter and lime juice for freshness – these major three ingredients make it taste really good! You have to try!
Servings: 2
Time: 30-40 minutes
You need for the
...salad:
1 pepper
1 eggplant
4 hands of lettuce
2 tbsp olive oil
2 hand of blueberries
Salt and pepper
...salad dressing:
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp mustard
1 tsp maple syrup
Salt and pepper
...chicken:
30g chicken
½ lime (only juice)
Chili powder, salt and pepper
2 tbsp olive oil
...avocado almond dressing:
1 avocado
50g almond butter
2 limes
Salt and pepper
1-2 tsp maple syrup
How to make:
1. Start by making your salad. Simply roast eggplant circles and pepper for 30 minutes at 180 degrees Celsius with olive oil in the oven. Wash your lettuce and cut it. If you have less time, you can simply take fresh tomatoes or cucumber instead of eggplant and not use the oven.
2. Next, make the salad dressing: mix olive oil, apple cider vinegar, mustard, maple syrup, salt and pepper well together. Pour your dressing over your salad bowl. Stir!
3. Now you can prepare the chicken. Cut it into cubes and heat up a pan with some coconut oil. When it´s hot enough, put your chicken on the pan and dry it. Add salt, pepper and chili powder. Shortly before the end, add lime juice.
4. While your chicken is frying, make the avocado almond dressing. Put avocado, almond butter, lime juice, salt, pepper and maple syrup into a blender. Blend!
5. How to serve: put some the lettuce with the dressing into your bowl, add roasted eggplant and pepper, fried chicken and blueberries for on top. Put on top your avocado almond dip.
6. Enjoy your nourishing bowl!
