Servings: 2 (take the leftover meatballs as part for your next lunch bowl)
Time: 45 minutes
You need for the
…meatballs:
400g ground beef
1 egg
3 tbsp chopped olives
3 hands of parsley
Salt and pepper
1 tbsp olive oil
…cottage cheese dip:
300g cottage cheese
1-2 mini cucumbers
1 tbsp chopped carpers
1 tbsp lemon juice
Salt
…salad:
2 hands of ettuce
2 hands of spinach
½ zucchini
1 small avocado
1 ½ tbsp balsamic vinegar
1 tbsp maple syrup
3 tbsp olive oil
1 tsp Dijon mustard
Salt and pepper
…baked potatoes:
4-5 medium-sized potatoes
1 tbsp olive oil
Salt
How to make:
1. At first start with preparing the potatoes. Wash, dry and cut them into “French fries” size. Then preheat the oven to 180 degrees Celsius and bake them at first for 20 minutes with some olive oil and salt. Make sure that you just cover one half of the baking tray.
2. Then, mix balsamic vinegar, maple syrup, olive oil, mustard, salt and pepper together. Add some chopped lettuce, spinach, zucchini (thin slices) and avocado (cubes). Mix and place it aside.
3. For the meatballs chop your olives and herbs, whisk your egg with a fork and then combine it with the ground beef. Season with salt and pepper. Form little balls and add them to the one side of the baking tray. Pour over a bit of olive oil and bake it for another 20min in the oven.
4. In the meantime, chop your carpers, grate the cucumber and combine it with the cottage cheese, salt and lemon juice.
5. You can serve it by adding salad, baked potatoes, meat balls and dip to your bowl. Enjoy!
