Servings: 2
Cooking time: 20 minutes Total time: 1h 30 minutes
You need for the
…fried chicken:
300g chicken
2 tbsp lime juice
2 tbsp soja sauce
½ tbsp maple syrup
1 tbsp olive oil
…sweet potato puree:
1 big sweet potato
40gg cashew butter
1 tbsp lime juice
100ml almond milk
Salt and pepper
How to make:
1. For the sweet potato puree: peel your sweet potato and bake it with some olive for about 20-30 minutes in the oven at 180 degrees Ceslsius. It should be so soft, that you can easily blend it afterwards with cashew butter, lime juice, almond milk, salt and pepper.
2. For the chicken: cut it into smaller pieces and marinate it with some soy sauce, lime juice and maple syrup. Place it for about 1 hour or even overnight in your fridge. Then heat up a pan with some coconut oil and fry your chicken until slightly brown and the rest of the marination sauce at the end.
3. If you like to have some more greens, then just add a fresh salad or some baked veggies.
4. Enjoy!
