The Different Fish Curry

Yep, it´s different because you do not cook the veggies and fish. Instead you  fry the fish and add baked veggies and a sauce. This costs you even less time and you have your quick curry even under the week!

Servings: 2-3
Cooking time: 30min                               Total time: 1h

You need for the
...veggies:
2 small parsnips
3 small carrots
3 potatoes
½ big sweet potato
2 tbsp olive oil
Salt and pepper

...fish:
350g ocean perch or more (changeable with other fish)
1 tbsp olive oil

...curry sauce:
250ml coconut milk
100ml vegetable stew
3 tsp cashew butter
2 tsp cumin
2 tsp curry powder
2 tsp Ras el Hanout (special spice)
Salt and pepper

How to make:
1. The first step is the preparation of the veggies. Wash them, dry them and if it´s necessary peel them. I always peel carrots. The parsnips, sweet potato and potatoes often, but sometimes the skin is okay and don´t has to be peeled. That´s of course saving time. Next important thing is to keep in mind, that all the vegetables should be cut into the same size. Put all of them onto one baking tray with baking paper. Combine them with olive oil, salt and a little pepper. Bake for 30-40 minutes at 180 degrees Celsius in the oven.
2. Then take out the fish and wash it properly. Dry it and make bite-sized pieces out of it. Don´t forget to season it with salt and pepper!
3. Next you should heat up the pan with the remaining olive oil.  When it´s hot enough fry on your fish and add all the ingredients for the curry sauce: coconut milk, vegetable stew, cashew butter, cumin, curry powder and Ras el hanout. Combine and let it cook until the fish is cooked. That takes about 10 to 15 minutes.
4. At last, add to your fish curry all the veggies from the oven. Now the very last step is to mix again. The ratio of fish and vegetables should be fine!
5. Enjoy on a cold fall or winter day!

What´s Ras el Hanout?
Ras el Hanout is a spice mixture which comes from Maghreb, the north of Africa. You can translate the name as “chef of the land”. It is made of about 30 (yes 30!!!) different kind of spices. You often find as elements turmeric, cinnamon, cumin, black pepper and ground chili peppers.  The exact composition is not known, in every region, it´s a little bit different. You can use this spice for oriental veggies, lamb or couscous.
