Lemon And White Chocolate Cups

In the mood for something sweet, not too sweet, maybe a bit sour and refreshing? Then the combination of lemon and white chocolate might be perfect for you! You can store these cups in your fridge/ freezer and enjoy them anytime to satisfy your sweet cravings.

Servings: 11 cups
Cooking time: 20 minutes                    Total time: 50 minutes

You need for the
...dry ingredients:
120g oat flour
½ tsp vanilla
Zest of ½ organic lemon
A pinch of salt

...wet ingredients:
Juice of ½ - 1 lemon
30g maple syrup
30g cashew butter
20g coconut oil

...top:
100g melted white chocolate
1-2 tbsp coconut oil
1 tbsp tried raspberries
Zest of ½ organic lemon

How to make:
1. Put and stir all the wet ingredients in a larger bowl together. Then add all the dry ingredients and mix them with the wet ones so that the dough is well combined.
2. Form little balls and add them to a silicone form and press them to the bottom. Melt white chocolate with some coconut oil and add the same amount (about 1 tbsp) to each cup). Decorate with dried raspberries and lemon zest and make sure that you press the toppings a bit into the white chocolate, so that they really stick to the cups at the end!
3. If you have no such form, leave them as balls and dunk them afterwards into the white chocolate and decorate them then with your toppings.
4. As last, refrigerate the cups for about 30min in your freezer and then they are ready to be enjoyed!
