Cold Gazpacho Salad

You like gazpacho but you have no idea how you want to serve it? Then, make this veggie salad using gazpacho as dressing. Straight from the fridge it´s the perfect to survive summer heat!

Servings: 2 (as side dish)
Cooking time: 20 minutes           Total time: 40 minutes

You need for the
...gazpacho dressing:
8 small tomatoes
1 shallot
3 small garlic cloves
2 tsp soy sauce
Juice of ½ lemon
2 tbsp apple cider vinegar
1-2 tsp agave syrup
4 tbsp olive oil
Salt and pepper

...salad:
1 zucchini
2 small red peppers
½ cauliflower
2 tbsp olive oil
Salt and pepper

How to make:
1. Start by preparing your veggies. Wash, dry and cut zucchini, red peppers and cauliflower. I like to make zucchini halfmoons, middle-sized pepper cubes and cauliflower florets. Add these veggies to a baking tray, pour over the olive oil and season it with salt and pepper. Then bake it at about 180 degrees for 35-40 minutes in the oven.
2. Meanwhile prepare your dressing. Cut tomatoes and blend them with shallot, garlic, soy sauce, lemon juice, apple cider vinegar, agave syrup, olive oil, salt and pepper.
3. When the veggies are done with baking in the oven, let them cool down and after mix them with your veggies.
4. Tip before serving it: place the mixed salad for about two hours in the fridge as in my opinion it tastes cold the best! Enjoy!
