Marinated Radish

I love it to have some marinated veg in my fridge – especially when my time for cooking for the upcoming week is limited or when it´s very hot and I just want to eat something cold. This radish tastes very good and so easy to make. So let´s marinate some radish!

Servings: 2 (as side dish)
Time: 30 minutes

You need for the
…marinated radish:
About 400g radish
1 garlic clove
2 tbsp coconut yoghurt
3 tbsp white wine vinegar
Juice of 1 lemon
1-2 tbsp agave syrup
2 tbsp olive oil
Salt and pepper

How to make:
1. Start with putting all the ingredients into a jar: pressed out garlic, coconut yoghurt, white wine vinegar, lemon juice, agave syrup, olive oil, salt and pepper. Carefully screw down the cover of your jar. Shake it until all the ingredients are well combined.
2. As last, grate your radish into very thin slices and mixed it with the dressing, so that all of the radish is int touch with the dressing.
3. Add a top to the bowl where you have mixed radish and the dressing together. Place it for at least 10 hours or overnight in the fridge, so that the radish can absorb well the dressing.
4. Enjoy!
