Smoked Tofu And Pumpkin Salad

This salad is simple – you just need to make the dressing, bake your pumpkin and cut smoked tofu. There is almost no work and you still have a healthy lunch or dinner salad!

P.S. I´ve tried this recipe with broccoli instead of pumpkin as well. This combo tasted amazing too and it is the perfect alternative if you have no pumpkin at home. You just have to bake the broccoli for 20 minutes in the oven - this is even faster than the original recipe with pumpkin!

Servings: 2
Cooking time: 15-20 minutes           Total time: 45 minutes

You need for the
...veggie and tofu base:
1 small pumpkin/ large broccoli
2tbsp olive oil
200g smoked tofu
Salt and pepper

... almond butter dressing:
2 tbsp almond butter
1 tbsp tamari
3 tbsp coconut yoghurt
Juice of ½ lime
1 tsp coconut sugar

...topping:
2 tbsp of almonds

How to make:
1. Firstly, peel the pumpkin, cut it into smaller chunks and place them on a tray with baking paper. Add some olive oil and season it with some salt or pepper. Mix it and bake it for about 30 minutes in the oven at 180 degrees Celsius.
2. Meanwhile cut the smoked tofu into flat and small slices.
3. Next, mix the almond butter dressing. Squeeze your lime and combine it with almond butter, tamari, coconut yoghurt and maple syrup.
4. Afterwards put everything together: broccoli/pumpkin, smoked tofu and dressing.
5. Top it with chopped almonds and enjoy!
