 Baked Gyros Tofu

Gyros needn´t be made of pork: you can make a vegan version too. This tastes in my opinion even better! Simply mix the tofu with typical gyros spices and some other ingredients I´ve listed below. Let the tofu soak up the flavor and then bake it in the oven. Tada: you´ve made your own vegan gyros without any artificial additives! I like to serve it with some salad, baked potatoes and tzatziki...

Servings: 2 (as side dish)
Cooking time: 20 minutes                 Total time: 1h 40 minutes

You need for the
...tofu:
200g smoked tofu
200g normal firm tofu
1 big red onion
2 big garlic cloves
5 tbsp coconut yoghurt
2 tbsp olive oil
Juice of ½ juicy lemon
1 tsp agave syrup

...spice mix:
1/3 tsp chili powder
1 tsp oregano
½ tsp cumin
½ tsp coriander
½ tsp smoked paprika powder
½ tsp sweet paprika powder
Salt and pepper

How to make:
1. Start by mixing all the ingredients for the marination together: coconut yoghurt, spices, lemon juice, agave syrup and olive oil.
2. Then pat dry your firm tofu and cut it into the size you like - I made them kinda random, so that it´s rather similar to classic recipe. Chop the red onion as well as the garlic cloves.
3. Now add the red onion, both tofu types and garlic to your bowl with the marination. Combine!
4. Optional you could wait an hour and let the gyros rest (to soak up all the spices). Afterwards you should mix it well and put the gyros onto a baking tray with baking paper.
5. Bake the tofu at 180 degrees for about 20-25 minutes. Let it shortly cool down and enjoy!
