Crunchy Peanut Tofu

Peanut, miso and tofu – a perfect match! I love this combo since I´ve had my first bite. And it´s not incredibly delicious but also healthy. Peanuts contain essential fats and proteins. Miso is fermented and said to be good for digestion and your gut health. Lastly tofu is a source of vegan protein and secondary phytochemicals. So, worth to try this recipe!

P.S: You could serve it with some veggies or brown rice to make it even better and healthier.

Servings: 2 (as side dish)
Cooking time: 20 minutes            Total time: 1 h 20 minutes

You need for the
...tofu:
300g tofu
30g peanuts
1-2 tbsp sesame oil (refined)

...sauce:
2 big tbsp peanut butter
3 tsp miso paste
1 lime (juice)
1 tbsp maple syrup

How to make:
1. For the marination: mix peanut butter, miso paste, lime juice and maple syrup well together. Press out your tofu and add it to your paste. Marinate your tofu for about 1 to 2 hours or even overnight.
2. Before you are frying your tofu (again), chop your peanuts and add them to the tofu. Heat up a pan with some sesame oil and fry it for 5-7 minutes until golden brown.
3. Seve with some veggies or brown rice. Enjoy!
