Protein Tofu Bowl

The secret for this tasty bowl is definitely the dressing – spicy, Asian inspired and too good to be true! Therefore I used it for the tofu, as salad dressing and as drizzle for the veg!

Servings: 2
Time: 1 hour

You need for the
...bowl:

200g tofu (I had 100g normal and 100g smoked tofu)
100g frozen edamame beans
1 medium-sized sweet potato
1 corn on the cob
5 small red tomatoes
2 hands of spinach
4-6 tbsp dip (I had Muhammara)

...spicy dressing:
2 garlic cloves, pressed out with a garlic press or minced
5 tbsp soja sauce or tamari
Juice of 1 lime
2 tbsp apple cider vinegar
3 tbsp maple syrup
2 tbsp sesame oil (refined)
2 tsp smoked paprika powder
2 tsp garam masala

How to make:
1. For the spicy dressing: mix all the ingredients, so garlic, soja sauce or tamari, lime juice, apple cider vinegar, maple syrup, sesame oil, smoked paprika powder and garam masala together. My tip: put all the ingredients in a jar with lid and then shake it.
2. For the bowl: I recommend to make a traybake with tofu, sweet potato, and corn. My tip is to cut the tofu into cubes and to mix it with half of the spicy dressing. Then heat up the oven to 180 degrees. At first, bake sweet potato on a baking tray for 20 minutes. Afterwards add the tofu and corn and bake for another 20 minutes. For the last 5 minutes you could add 2-3 tbsp of the dressing to the sweet potato and corn.
3. If you take the same veggies as me, you can prepare the tomatoes, some spinach and edamame beans in the meantime. The edamame beans you have to cook for 3-6 minutes in hot water.
4. Put everything into your bowl, pour over the rest of the dressing and enjoy!
